Goat cheese stuffed sweet piquanté peppers
These bite sized peppers are a delicious addition to a crudités or cheeseboard. A super simple ingredient to find in your cheese section of your market and so simple to put together.
Ingredients
About 15-20 marinated sweet piquantè peppers or jar of peppadews.
4 oz log of organic goat cheese, room temperature
Finely chopped mixed herbs such as thyme, basil, and chives to taste
2-3 Tablespoons of Extra Virgin Olive Oil or Peperoncino Extra Virgin Olive Oil
Flaky sea salt and freshly ground pepper to taste
Directions
In a small bowl, add the room temperature goat cheese and slightly mix to soften.
Add the the fresh herbs and a tablespoon of the olive oil or peperoncino oil to soften and blend together.
Continue drizzle the olive oil until you reach a fairly smooth homogeneous mixture. Adjust as you go— some goat cheeses are more crumbly than others and need a bit more of olive oil.
Add flaky sea salt and freshly ground pepper to taste.Once you reach your desired consistency, use a small teaspoon and fill the peppers.
